It was written in the stars that these old vines of Wadenswil clone Pinot would make bubbles—the fruit they produce naturally stops ripening at precisely the right levels for Tom's sparkling wine desires.

So endowed with Pinot Noir character—it's partly the cherry and berry tones, partly the way it moves across your palate and builds in concentration through the finish. Delightfully wine-like (duh) and also what might be referred to as "vinous," it is also simply delightful!

A rich, aromatic array of ripe apricot, mirabelle plum, and decadent cherry tart with a buttery pastry crust. The bright initial sip shows Anjou pear, which gives way to the delicate sweetness of fresh spring strawberries and pastry crust. It is so endowed with the excellent weight, creamy texture, and vinous complexity typical of a great Blanc de Noir, finishing elegantly long, clean, and refreshing.

Food Pairing Suggestions

  • Savory Tarts: Mushroom and Gruyère tart or a classic Quiche Lorraine to mirror the wine's buttery, pastry notes.

  • Asian Specialties: Peking duck with hoisin sauce or crispy pork belly bao buns to cut through the rich meat while complementing the strawberry and cherry notes.

  • Charcuterie: Prosciutto di Parma, triple-cream Brie, or aged Gouda to contrast the wine's crisp acidity and match its structural weight.

We taste as much or more Oregon wine in a given year than anyone on the planet. We look for the needles in the haystacks, the wines you won't find in your local wine store. Wineries have long sought our help to sell their most limited, unique bottlings.
