Our first feature from Hanatoro, the ‘21 Cabernet is a knockout. Unstoppably delicious, velvety Cabernet fruit plays center stage–dark cherry, rich blueberry, blackberry sauce–with cameos from some of our favorite accents: violets, graphite, tobacco. It’s pretty great right out of the bottle, and it’ll show you some classic Cab structure. But give it some air and watch the velvet turn to satin.

Hanatoro is a collaboration brought forth by Steve Thomson, CEO of Oregon’s Cristom. They make a tiny amount of Cabernet each vintage (just over 200 cases of 2021), from Octave vineyard. Located within the SeVein vineyard development on the Oregon side of the Walla Walla AVA (where many Walla Walla’s best vineyards are located), Octave sits directly above the historic Seven Hills vineyard. This elevated position protects it from damaging freezes while providing exceptional exposure, airflow, and diurnal temperature shifts.

We taste as much or more Oregon wine in a given year than anyone on the planet. We look for the needles in the haystacks, the wines you won't find in your local wine store. Wineries have long sought our help to sell their most limited, unique bottlings.
