This Grenache was sourced from Joe Hattrup’s Elephant Mountain Vineyard in the Rattlesnake Hills Appellation of Yakima Valley, Washington.
At harvest, we foot-stomped a small layer of fruit at the bottom of a tank and layered the remainder of the fruit on top, 100% whole cluster. The tank was then gassed and sealed for 20 days. Once opened, the grapes (mostly still fully intact) were pressed and fermentation was completed with native yeast. This wine was aged in terracotta amphora for 12 months followed by neutral oak for 5 additional months. Gravity bottled, unfined and unfiltered.
This unique wine opens with top notes of chinotto soda and cascarilla that give way to intense layers of spice, licorice, and notes of dried cherry, wrapped around a core of strawberry/plum fruit. Contact with stems adds elements of white pepper and oregano.
The palate is expansive, and round with mouth-filling fruit pulling through to a soft finish. It is delicious and intriguing now in its youth, but will lend itself to aging up to 5 years as well.
